Ham Fried Rice
INGREDIENTS 2 cups water 1 cup long grain rice 3 tablespoons oil, divided 2 large eggs 4 ounces cubed ham, or lunch meat ham 1 small chopped onion (1/2 medium onion) 1 cup frozen green pea, thawed (I made it without peas, still delicious!) 2 tablespoons soy sauce 1/2 teaspoon oriental sesame oil DIRECTIONS In medium sauce pan bring water to a boil over high heat. Stir in rice. Reduce heat to simmer and cover the pan, simmering about 20 minutes. In a large skillet heat 1 TBS oil over med heat, coating the pan. In a small bowl beat eggs with a little salt and pepper. Add the eggs to the skillet and fry until set, turning once. Transfer to plate and cut into small pieces, then set aside. In the same skillet heat another TBS oil. Add ham and cook until lightly browned. Transfer ham to eggs and set aside. In same skillet, add final TBS oil. Add onion and stir fry for 1 minute.
