1 pound ground beef Kosher salt and freshly ground black pepper One 10-ounce package white mushrooms, halved or quartered if large 1 tablespoon extra-virgin olive oil 1/2 teaspoon paprika 3 cloves garlic, finely chopped. (Or 3/4 t. garlic powder) 1 carrot, cut into 1/4-inch dice 1 small onion, chopped 1 tablespoon tomato paste (Or ketchup) One 15-ounce can low-sodium beef broth (Or 2 c. water with 2 t. beef stock) 1 tablespoon Worcestershire sauce 2 cups dried penne pasta 2 ounces cream cheese, at room temperature 1/4 cup sour cream 3 tablespoons chopped fresh chives (Optional) 3 tablespoons chopped fresh parsley leaves (Or 1 T. dried) Directions Heat a large nonstick skillet over medium-high heat. Add the beef, season with salt and pepper and cook, breaking the beef into small pieces with a wooden spoon, until well browned, about 5 minutes.
