Sarah's Roasted Tomato Salsa

Roasted Tomato Salsa Servings: Makes 2-1/2 cups Cook Time: 10 Minutes Total Time: 25 Minutes Ingredients 4 vine-ripened tomatoes, quartered 2 small yellow onions, cut into wedges 3 Serrano chili peppers, stemmed (use 1 for mild, 2 for medium, 3 for hot) 1/4 cup vegetable oil 1 teaspoon garlic powder  2 teaspoons salt 1/2 teaspoon cumin 1/4 cup cilantro leaves 1 tablespoon fresh lime juice, from one lime, plus more if needed Instructions Preheat the broiler and set an oven rack about 5 inches beneath the heating element. Line a rimmed baking sheet with aluminum foil. Place the tomatoes, onions, whole Serrano chile peppers and vegetable oil directly on the prepared baking sheet and toss with your hands. Matt and Jac's Chili

1 lb. ground hamburger or ground turkey 1 medium onion, chopped 1 medium green pepper, chopped 2 cans of creamed corn 2 cans of kidney beans (drained) 2 cans of diced tomatoes 2 cans of Hormel chili (or any brand of chili you prefer) 1 can of black olives (slice them in half) Sauté onion and green pepper together and then put into large pot. Cook the hamburger (or turkey burger) and add into pot. Then add all the cans. Simmer for half hour, stirring often. Or you could just heat the ingredients together until they are warm because it is just as delicious.

Eggs Benedict Casserole

Ingredients 6 English muffins 12 ounces Canadian bacon, chopped 8 large eggs 2 cups whole milk 1 teaspoon kosher salt 1/2 teaspoon seasoned salt, I like Lawry's 1/2 teaspoon black pepper 1 teaspoon onion powder 1/2 teaspoon paprika 1 cup Monterey Jack, shredded, optional 3 cups prepared hollandaise sauce (I just use the packets at the store) Instructions Grease a 9×13 inch casserole dish with butter, or spray with non-stick spray. Chop all the Canadian bacon into bite size pieces. Add HALF to the bottom of the casserole dish and spread out. Split the English muffins with a fork. Toast each half, spread with butter, and then chop them all into 1 inch pieces. Add half of your English muffin pieces to the casserole dish, on top of the Canadian bacon. Repeat the layers: add the remaining Canadian bacon, then add the rest of the English muffins. Make the egg mixture. Classic Deviled Eggs

This recipe is classic and my family's favorite: Yield: 12 halves 6 large eggs 1 teaspoon Dijon mustard 1 to 2 dashes Tabasco sauce, to taste Salt, to taste ¼ teaspoon freshly ground black pepper 1 tablespoon snipped fresh chives 3 tablespoons mayonnaise Paprika, for garnish Whole fresh chives, for garnish PREPARATION Step 1 Rinse eggs with warm water, and place in a small saucepan. Cover with cold water, place the pan over medium-high heat and bring to a boil. Turn off heat, cover and let sit for 10-12 minutes. Drain, rinse under cold water and peel. Cool in the refrigerator, loosely covered, for 15 minutes. Step 2 Halve eggs lengthwise, and carefully scoop out yolks. Place yolks in a bowl, and mash with a fork. Add mustard, Tabasco, salt, pepper and snipped chives. Stir in mayonnaise. Step 3 Fill each egg white with about 1½ teaspoons of the egg-yolk mixture and dust the top with paprika. Arrange in a spoke design on a platter; garnish with whole chives.

Low Carb Breakfast Casserole

1 pound turkey sausage 4 green onions 1/2 green bell pepper , diced 1/2 red bell pepper , diced 12 eggs 1 cup sour cream (light or regular) 1/4 cup milk salt and pepper 2 cups shredded cheddar cheese Preheat oven to 350 degrees and spray a 9x13 with cooking spray. Brown sausage then cook onions and bell peppers in the same pan. If I don't have fresh, I just use a bag of frozen peppers and onions - it tastes great. After peppers are cooked allow them to cool while you make the egg mixture. Crack eggs into a bowl and whisk. Add milk, sour cream, salt and pepper. Whisk until well blended.  Put peppers and sausage into prepared pan. Sprinkle half the cheese over it, then pour the egg mixture on. Sprinkle the rest of the cheese on top and bake for 40-55 minutes. Mine usually takes closer to 55 minutes in a 350 degree oven. Enjoy! 

Amanda's Creamy Tomato Soup

Most of the time I don't add coffee creamer and it turns out just fine. I sprinkle a bit of basil in at the end--we like that flavor.  Ingredients 1 cup chicken broth 1 oz. butter 2 Tablespoons sugar 1 Tablespoon chopped onion 1/2 teaspoon baking soda 16 oz. can diced tomatoes with juices 16 oz. can crushed tomatoes 8 oz. whipping cream 8 oz. liquid coffee creamer Directions Combine chicken broth, butter, sugar, and onion. Simmer until onions are clear. Add tomatoes and baking soda and stir well. Add cream and liquid creamer, then heat over low heat to serve.

Maya's Snickerdoodles

Maya made these cookies totally by herself, so now we consider them her specialty. Enjoy! INGREDIENTS 1 cup butter softened 1 1/2 cups sugar 2 eggs 1 tsp vanilla 2 tsp lemon juice 2 3/4 cups flour 1 tsp baking soda 1/2 tsp salt 3 tbsp sugar 1 tbsp cinnamon Mix together flour, baking soda, and salt. Set aside. Cream together sugar and butter. Add eggs, vanilla and lemon juice and blend well. Add dry ingredients to wet ingredients and mix well. Shape dough into 1 inch balls and roll in the cinnamon-sugar mixture. Place 2 inches apart on ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Should make about 3-4 dozen.
