Jessica's Slow Cooker Pot Roast

Easy Slow Cooker Pot Roast

From Jessica, by Allrecipes.com

Ingredients

4 lbs chuck roast

salt and pepper to taste

1 packet dry onion soup mix

1 cup water

3 carrots, chopped

1 onion, chopped

3 potatoes, peeled and cubed

1 stalk celery, chopped

Instructions

1. Season the roast with salt and pepper to taste. Brown on all sides in a large skillet over high heat, about 4 minutes per side.
2. Place the roast in the slow cooker and add the soup mix, water, carrots, onion, potatoes, and celery.
3. Cover and cook on Low setting for 8 to 10 hours.

**I have seared my roast in the past and didn't notice a huge difference, so I skip that step now. I put it right in the crockpot frozen, the night before. These roasts go on great sales occasionally, so watch and stock up! I start with just roast, water, seasoning and onion first (I slice onions, not dice). I add carrots 3 or so hours before serving so they still have some bite to them. And don't usually add celery (preference) and potatoes (we like mashed potatoes).
