Emily's Hawaiian Meatballs

Ingredients 32 oz. bag of meatballs (I like homestyle, Italian works too) 1 can pineapple tidbits 1 medium pepper (any color) chopped up 1 zucchini chopped up 3/4 to 1 c. brown sugar (depending on how sweet you like it) 1/2 c. white vinegar 2 Tbs. corn starch 2 Tbs. soy sauce 1 tsp. garlic salt (this is an estimate, do it to taste) 1/4 c. water Instructions So I don't know about you, but my kids do not like cooked pineapple. So I will often put half the can of pineapple, with all the juice, in my blender with the brown sugar, vinegar, corn starch, and soy sauce. I blend it just till combined to make the sauce. The rest of the ingredients are simply dumped in a big skillet with the sauce drizzled over the top. Sprinkle garlic salt on top. Bring it to a boil and let it simmer for about 20 minutes. If the sauce is too strong or too thick at the end I will add the 1/4 cup water. Serve over rice. My kids DOWN this dinner!

Mom's Spaghetti Sauce

1 1/2 lbs. hamburger 1 medium onion chopped 1 bell pepper chopped 2 c. mushrooms sliced 2 cloves minced garlic (or you can use 1 tsp. garlic salt, or garlic powder) In a large saucepan, cook meat and vegetables until brown and tender. Drain. Add the following ingredients. 3 16 oz. cans tomatoes chopped and skinned 1 6 oz. can tomato paste 1/4 c. brown sugar 1 1/2 tsp. dried oregano  1 tsp. salt 1/2 tsp. dried basil 1/2 t. dried thyme 1 bay leaf 1 to 2 cups water depending on desired thickness Bring to a boil and reduce the heat.  Let simmer on low heat for two hours or until desired consistency, stirring occasionally.  Remove bayleaf. Serve over hot spaghetti.

Restaurant Style Salsa Courtesy of The Pioneer Woman Ingredients:  1 can  (28 Ounce) Whole Tomatoes With Juice 2 cans  (10 Ounce) Rotel (diced Tomatoes And Green Chilies) 1/4 cup  Chopped Onion 1 clove  Garlic, Minced 1 whole  Jalapeno, Quartered And Sliced Thin 1/4 teaspoon  Sugar 1/4 teaspoon  Salt 1/4 teaspoon  Ground Cumin 1/2 cup  Cilantro (more To Taste!) 1/2 whole  Lime Juice Directions:  Note: this is a very large batch. Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.  Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like---I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed. Refrigerate salsa for at least an hour. Jessica's Meatloaf

Yes Virginia, There is a Great Meatloaf This is basic, easy, and so delicious. One of Dallin's favorite meals! Meatloaf: 1 1/2 lbs ground beef 1 slice of bread (broken or chopped finely) 1 egg 1 small sweet onion, finely chopped 1 teaspoon salt 1/4 teaspoon ground black pepper 4 Tablespoons ketchup 1/2-2/3 cups whole milk or half and half Sauce: 4 Tablespoon apple cider vinegar 2-4 Tablespoon dark brown sugar, to taste 1/2 cup ketchup Directions:  Combine meatloaf ingredients and place in loaf pan. Smooth out the top. Combine sauce ingredients and pour over top of meatloaf. Bake at 350 degrees for 1 hour to 1 hour 15 minutes, or until done. *Meatloaf should be plump from addition of milk or half and half, not runny. I usually make a second batch of the sauce served hot with the meatloaf. Enjoy!
